In the output you have option which enables to output to multiple files at once: 'Take File/Table name from field', and select 'Change File/Table name' below. So, I am not 100% sure what you are asking, but I believe the answer is yes. If you are trying to change the field name itself the Dynamic rename is the way to go. If you are trying to change the values in the fields I would recommend the multi field formula tool. Example of both attached.
